Metabolic Profiling of <i>Averrhoa carambola</i> Fruit Extract using UHPLC-ESI-QTOF-MS and Determination of the Concentration of Essential Elements using MP-AES

A rapid and sensitive ultra-high-performance liquid chromatography-electrospray ionization quadrupole time of flight mass spectrometry (UHPLC-ESI-QTOF-MS) based method was developed to separate identify 44 phenolics non-phenolics present in Averrhoa carambola fruit three different stages its growth. 5 anthocyanins, 9 phenolic acids, 3 flavones, flavanols, flavanones, amino vitamins other non-phenolic compounds were identified. The identification quantification 27 bioactive from methanolic star extract are being reported for the first time. All metabolites quantified by normalizing area under peaks with that internal standard hydrocortisone. extraction using a homogeniser (bead beater) found be best metabolites. Four essential microelements (Zn, Fe, Mn, Cr) macroelements (K, Mg, Na) MP-AES. zinc concentration (6.988 mg/100 g) higher than many cereals, vegetables fruits. showed excellent DPPH scavenging activity 93% after 30 min incubation dark dry weight sample 50 mg/ml. In conclusion, UHPLC-ESI-QTOF-MS MP-AES results presented here can used quality control food supplements medicines.
